Soul Weirdness?: Yes. TLDR: Bhaalspawn are formed from the essence of Baal, a God of Murder. Bhaalspawn are part god or, if this part is 'removed', they still hold a god's essence, because you can't just remove half the DNA that made them. That said, when the soul is exceedingly damaged or removed, a Bhaalspawn can and will turn into giant nightmare murder monsters.
Oh and they can sometimes do this by Choice (Jal'Naar cannot), so. You know. This is Fine.
How Do You Wanna Do This?: Fancy Capsule? Something something the SHRED guys can trigger the Slayer form at will. Slayer shows up if/when Jal dies. Look, there's so many ways this can go down.

How Do They Differ?:
A TLDR write up of the AU with notes for the later acts help.
The general gist is that while it follows the general Absolute plot beats of the games, it diverges right from the start: Gale is met on the Nautilod, Jal'nar has more chances to 'slip' than what is presented in Canon, the Companions have more role than presented in canon, and different camp followers like Tara and Fell. Other Characters are also affected, IE: Mayrina becomes a necromancer, Mol ends up a Wild Magic Sorcerer and not a Warlock, Wyll and Karlach are second cousins, though they don't actually know that until 'Granny Imoen' shows up in Act 2.
It also incorporates the EA tadpole gifts as there is dialogue in the full game that pertains to them, and changes up what is gained from Omeluum.
Syeira (the true Gorion's Ward) has a role as well - they first meet her around the Risen Road Toll House where she saves them from a fight that would have been a party wipe otherwise.
While Jal doesn't know it, the Bhaalspawn reveal will come mid-act 2 as they save Minsc, instead of early act 3. Halsin will also stay behind once the Shadow Curse has been lifted.
Though they are present more, the OG cast of the BG1 and 2 games are by no means solving things - this crisis is best solved by the one who first masterminded the plan - Bhaal's amnesiac Golden Child.
